Quick & Easy Weeknight Dinner: Sweet Garlic Chicken

Sweet Garlic Chicken

What you’ll need:
2 boneless chicken breast, butterflied
2 tbsp brown sugar
3 cloves of garlic, minced
2 tbsp olive oil
1 tsp red pepper flakes
1/2 tbsp oregano
  • Preheat oven to 450.
  • Place foil in baking dish for easy clean up. 
  • In a small skillet, place oil, garlic,  and pepper flakes until the garlic softens.  Do not let burn –  the garlic will be very bitter. 

  • Remove from heat and add in brown sugar. You don’t want it to caramelize. 
  • Smear oil mixture all over butterflied chicken.  
  • Cook for 15 minutes.  After 15 minutes check the internal temperature with a thermometer.  Your thermometer should read 165.  
  • Enjoy. 
This would be great with some roasted asparagus or parmesan brussel sprouts (Here’s my recipe below).

Parmesan Roasted Brussel Sprouts

What you’ll need:

1 1/2 lbs brussel sprouts, trimmed and halved
1/4 cup parmesan cheese
1/4 cup olive oil
salt and pepper, to taste
  • Preheat oven to 400.
  • Place sprouts, oil, bacon, salt and pepper on sheet pan. Toss ad spread into one single layer.
  • Roast for 20-30 minutes.
  • Sprinkle with parmesan cheese.
